from 5:30 p.m. -9:30 p.m. Christmas dinner at Pacific's Edge features an inspired four-course dinner with live jazz music in the newly updated Lobos Lounge. Menu:
First Course
• Persimmon Salad endive, candied pecan, satsuma mandarin, pomegranate vinaigrette
• Butternut Squash Soup maine lobster, pepitas
• Yellowfin Tuna Poke shaved fennel, uni, blood orange emulsion
Second Course
• Sweetbread wild mushroom, fingerling potato, parsnip purée, truffle jus
• Winter Truffle & Root Vegetable parsnip, sunchoke, sweet potato, celery root, perigord purée
• Maine Lobster wild watercress, fennel, meyer lemon
Entrée
• Prime Rib Chop chanterelle purée, fingerling potato, herb salad, bordelaise
• Turbot kabocha squash, chestnut, celery root, truffle jus
• Sonoma Duck blood orange marinade, pomme dauphine, brussels sprout, duck jus
• Colorado Lamb savoy cabbage, red wine braised cipollini, parsnip purée, truffle jus
Dessert
• Warm Chocolate Tart white chocolate, peppermint ice cream
• Gingerbread Cheesecake spiced chantilly crème, pear compote, candied ginger toffee
Sticky Toffee Pudding golden raisins, brown butter ice cream

$110 per person, plus tax and 18% gratuity; 5 - 12 years old $55.00 per person.
